Phacelia honey (Bluebell honey)

Phacelia or bluebell is the second best honey providing plant after acacia. Its honey is light and broke in colour, slightly opaline and translucent. Its scent is slightly lemony and reminds of phacelia pollen. Honey remains liquid for a relatively long time, due to its high content of fructose it crystalizes slowly. It can be eaten on its own as a delicacy. It is mostly used as an ingredient of mixed blossom honey, only rarely produced as a separate honey type. With its pleasant flavour it is easily digested and therefore recommended to weak-stomached people.
Phacelia honey is disinfective, nurishes the skin and effectively cures burnt skin. It significantly influences the level of cholesterol in the blood.
